Award winning pizzeria is looking for a full time pizzaiolo (pizza maker) to join their team. Applicants must be certified under the Associazione Verace Pizza Napoletana (AVPN) or equivalent years of experience using wood fire oven

Pizzaiolo (Pizza Maker/Pizza Cook) NOC 6322
Location of work: 1190 Victoria Drive, Vancouver, BC, V5L4G5 Via Tevere Pizzeria Napoletana Ltd
Salary: $18.00 - $24.00 per hour (dependent on experience and abilities), 35 - 40 hours per week, over time to start after 40 hours a week. Applicant must be willing to work during the week/weekends
Terms of Employment: Full Time/Permanent
Years of experience required: three years minimum experience as Pizza Chef working with wood fire oven
Education Requirements: Completion of Secondary School, diploma or certificate from AVPN or equivalent training (woodfire oven and follows guidelines of AVPN) also qualifies. Pizzaiolo (PIZZA MAKER) would be expected to start as soon as possible and should be available for full time work.
Although not mandatory, the ability to speak Italian is an asset.
Applicant must be able to work in a fast-paced environment, work under pressure, and meet tight deadlines in a physically demanding environment
Able to fill in shifts on short notice.
Must be a quick learner, and can work in a fast- paced environment.
Responsibilities include but are not limited to food prep, food assembly, cooking, plating, garnishing and customer service.
Must have the ability to use all kitchen tools and equipment, including expertise in wood fire oven for pizza preparation.
Follow recipes and/or product directions for preparing, seasoning and cooking, working with specialized cooking equipment (wood fire oven).
Instruct other chefs in preparation, garnishing and presentation of food and in new cooking techniques
Maintain preparation standards of the AVPN when preparing pizza including, but not limited to:
o proper mixing of dough during preparation
o shaping of dough prior to resting for specified time period
o handling or stretching of dough to prepare for cooking
o topping dough with traditional ingredients and/or ingredients provided as per established recipes
Use of a wood fire oven (not gas assisted or electric) according to AVPN standards when cooking pizza including, but not limited to:
o using proper technique to place pizza dough on pizza peel in preparation for cooking
o placing pizza dough into wood fire domed oven and understanding different intricacies of the oven (ie. Proper placement, proper spinning)
o using proper technique to cook the top of the pizza as per AVPN instructions and standards
Control costs by adhering to recipes, following preparation standards.
Maintain a sanitary kitchen by adhering to the provincial and local sanitation storage and refrigeration requirements and codes cleaning equipment.
Operate equipment by following operating instructions; troubleshooting breakdowns; performing preventive and cleaning maintenance.
Receive inventory, move and lift food and beverage products and supplies.
Communicate with co-workers and follow set of cooking instructions.
Team Player- able to share workload with co-workers/perform other kitchen duties as required.
Able to assist with developing recipes using authentic/traditional Neapolitan ingredients/toppings.
